This separation allows to analyze fatty acid composition of butter by HPLC and it is an alternative to GC analysis of fatty acid methyl esters. Chromatopicture shows the separation of all fatty acid phenetyl esters starting from butiryc acid to linolenic acid.<\/p>\n\t\t
Discovery<\/p>\n\t\t
This is the first example of derivatization of butter triglycerides as phenetyl esters the allows the determination of fatty acid composition of butter by HPLC with UV detection.<\/p>\n\t\t
